Here's one you likely won't get from anyone else:  Salt Lake City.  You have world class trout rivers in the Provo and the Weber (and others).  You have the Uinta mountains with hike-in lakes for grayling, cutts, brookies.  Warmwater opportunities including tiger musky, smallmouth, et cet...  And plenty of fly shops. And yes, year round.  Winter whitefishing (and trout fishing) is big stuff. BUT my favorite fishing city happens to be ... right here.
