Forget going all the way down to the keys if just for fishing, you will be in prime territory around both the Tampa and West Palm Beach area. You have Jupiter, Stuart, and Ft Pierce all withing  45 minutes. Stuart's Flounder population is up, my dad caught one last week just outside the inlet, my brother pulled in a great redfish and then there is all the snappers and spanish mackeral. Then in Tampa you can go for the tarpon, reds and much more.
 
Key West is worth the vacation but if you are short on time and are in the area you can get more fishing in without the travel.
