I've fished a pretty good deal out of Islamorada. It sounds like you may be looking for some self guided trips. However, two guides that are pretty good and would put you on the size of fish you are looking for are Captain Skip Paxton (Ivory Keys Charters) and Captain Jack Lavin (out of Lorelei). They are old timers who have incredible knowledge of the area.
