There is a swell little store that caters to the local anglers. Cross the Ponte Veccio and turn right on the first big street, upstream from the bridge. I'm going to Italy the first week of july and won't be fishing, but my general sense just from reading about the country is that any decent fishing would be further north than you will be.  I'm sure there is the Rome/Tuscany equivalent of 4 mile run (i.e somewhere you wouldn't dream of fishing unless you really didn't have anywhere better to go) but doesn't seem like there is much otherwise that would be worth bringing a flyrod along.
