{Tidal Potomac Fly Rodders} Thanksgiving in Destin, FL

It turns out that I'll be spending some time in Destin, FL (it's near Pensacola) around Thanksgiving this year. A few quick searches have revealed some good fishing videos from that area, but I'm unsure what time of year they're all from. 

I've heard that the Bull Reds begin migrating to that area around late November/early December. Can anyone confirm that? What else might we get into? And what gear would be required? 8-weights or 10-?

Also, any guide recommendations would be greatly appreciated. We'll have 2 competent fly casters and possibly up to 3 novices. But they'll probably be happy to spin fish, is that's an option.
