I've fished Hilton Head for redfish. It'll get you on the water, but nothing to write home about. Redfish outside of New Orleans is great that time of year. I've done trout streams in the north Georgia / Western NC area, and there are good opportunities if you like nymphing, but I haven't fished there other seasons yet.
