Are you looking for fishing or just vacationing? I have been doing some research myself lately as I have a friend who just moved to England. Scotland has some of the most famous salmon rivers in the world (Spey, Dee, Tay ect) and they are actually accessible to the average joe for a reasonable cost. Check out fishpal, you can reserve beats there and look at past catch rates for each beat. It is my understanding that spring is considered the best time, as that is when you can fish for "springers" which are considered the most desirable salmon. Not sure if this is true, but it is my impression that everyone uses very long spey rods there (15 feet+).
