{Tidal Potomac Fly Rodders} Little Help

I will be spending July 12 through 20 with in Gatlinburg Tennessee.  With the exception of having dinner in town with family, I intend to spend the week with a fly rod in hand, somewhere in the Great Smokey Mountains National Park.  I'm looking for advise or pointers from anyone who is familiar with fishing in the area.  I'm basically going in blind, as I haven't been there in 20 years.  Two of my nephews will be along and I intend to put a fly rod in their hands for the first time, so I would really like to find a stream with enough room to teach them to cast and maybe catch a fish or two to keep them interested.  When everyone else goes to "Dollywood" I intend to get as far away as possible and look for some headwater brookies, on the assumption that the fishing is comparable to Shenandoah National Park.

If there is anything interesting in the area other than Dollywood, go karts, and the Ripply's Museum, I'd be interested in hearing about that as well.
